Tarka Dhal

  TARKA DHAL. When we think of Indian cuisine, the first dish that comes to mind is dhal. Our wonderful Tarka Dhal is our homage to this staple meal. It’s super simple and seriously tasty! Serves 4 🌿 vegetable oil 🌿 1 onion, peeled + finely chopped 🌿 320g (11.3oz) red lentils, rinsed 🌿 2 tsp turmeric 🌿 2 tsp ground coriander 🌿 salt + pepper 🌿 8 garlic cloves, peeled + sliced 🌿 8 green chillies 🌿 2 tsp cumin seeds 🌿 1/2 tsp fennel seeds 🌿 2 tsp black mustard seeds 🌿 1 thumb of fresh ginger, peeled + chopped 🌿 1 small handful of fresh coriander (optional) 🌿 cooked rice or Indian bread, to serve (optional) Heat a little oil in a big pot on a medium heat. Crispy Sesame Tofu

  Recipe: Ingredients: 2 tbsp light soy sauce 1 tbsp maple syrup or any sweetener of choice 1 tsp sesame oil 1/8 tsp ground black pepper 2 stalks green onions, finely chopped 1 block (450g) firm tofu Cornstarch, to coat 1-2 tbsp cooking oil Method: 1. To start off with, combine soy sauce, maple syrup, sesame oil, black pepper and green onions into a bowl. Mix well and set this aside for later. 2. Drain a block of firm tofu, no need to press the tofu for this recipe, simply drain! Slice into rectangular pieces, that way you only have cook two sides instead of 6 (if you had cut them into cubes). Add a layer of cornstarch onto a large plate and lightly coat your tofu pieces in the cornstarch. Dust off any excess. 3. Heat the oil in a frypan over medium high heat. Once hot, pop the tofu slices in and fry until golden and crispy on both sides. 4. Once cooked, turn the heat down to low and pour in the sauce.
