Khan Ong Macaroni and Cheese
remove bacon to make vegetarian
3 - 6 cloves of garlic finely chopped
10 sage leaves finely chopped
1 1/2 cup of bread crumbs
150g of bacon finely sliced
80g butter
3 tbsp flour
600ml milk
2.5 cups of cheese grated (Comte, mozzarella, gruyere, aged cheddar) I used mozzarella and cheddar cause I didn’t have gruyere.
Salt and pepper to taste
500g bag of macaroni cooked to 2 minutes less than packet instructions in heavily salted water.
Pretty simple, combine the garlic sage and bread crumbs In a bowl.
In a large pot cool bacon on medium until fat renders and it colours about 3-4 minutes. Pour bacon and fat into bowl with bread crumbs and mix well. Set aside.
Back to the pot melt your butter then sprinkle on flour and cook it out for 2-3 minutes until it starts to slightly colour.
Deglaze with Milk on medium until it starts to slightly thicken (remember to stir) 4-6 minutes.
Add in your cheese and then season cook for a further 5 minutes.
Add in your cooked and drain macaroni. Stir until all combined then. Place Mac and cheese into an oven safe dish or leave it in the pot doesn’t matter this is jut for looks tbh. Scatter over the crumbs and bake at 180 for 20-25 mins.
